Bites of My Life

Let’s rewind to last Monday about 4:30pm when I was setting up for a work happy hour at our office. By 4:40pm I was in my car on the way to the emergency room. Short story a heavy glass plaque fell off a shelf onto my face slicing right above my lip open. Two emergency rooms and three stitches later and I was back in business. Why do things like this happen to me? Who remembers the mandoline slicer accident fall 2k16?

The week started interesting, but ended on a high with one of my best friend’s engagements! Such a fun night celebrating with friends from in and out of town. Now it’s a busy short week before I’m California bound for #ShesAlwaysBennett!

-Nothing like a Monday night trip to the ER…3 stitches later and we are back in business.
-This combo!!! Roasted cauliflower, chickpeas, spinach, cilantro, mint topped with tahini and dukkah.
-Lunch last week was another win! Slow roasted sweet potatoes, brown rice, Trader Joe’s cruciferous crunch with again, tahini and dukkah.

-Our sweetie Maddie is finally engaged and we loved getting to be a small part of the day!
-Sunday turned into a massive spring cleaning day that involved me pulling everything out of my closet, 4 bags of giveaway items, a trip to Bed, Bath & Beyond and Target and then back to Target, and the result of a very organized closet and under bed situation.

October get outta here! Pinch me, but was it not just April? I’m confused. Not mad, but confused. October is set to be fast and furious, so I’m sure in a blink it will already be November. Ended September starting the Fall Reset (which I’m loooooving), working a lot (ugh), and then off to east Texas for my bestie’s bachelorette. Another hustling week then crossing the border again for the infamous OU/Texas weekend!

-I spoke about the Fall Reset I’m doing a bit in last week’s post, but it officially kicked off last Monday. Woke up for a great workout coached by Kandyce and followed it with a delicious Reset Smoothie recipe by Blakely. Packed with pumpkin, spinach and turmeric!
-Another Fall Reset meal were these Veggie Fajita Tacos on siete tortillas I ate for dinner each night.
-And one more β€”> this Reset Avocado Toast was 2 pieces of Trader Joe’s Gluten Free bread with 1/2 an smashed avocado, turmeric, black pepper and a little cayenne (so satisfying).
-Big night for The Social Order crew, named 25 out of 50 Fastest Growing Private Companies in OKC!
-The prettiest house and sunset to host Camp Marge!
-Mornings at the lake >
-My very first college friend and bestie is getting married!
-Always taking pictures of food even at the lake. But this avocado chicken salad had to be documented. Just avocado, a little greek yogurt, cilantro, red onion, s&p and shredded chicken! Kudos to margaret’s MOH for planning the best bach weekend eats!
-Camp Marge campers all in for our girl!

Bites of My Life

This time of year, and especially this past week, had me thinking back to college and school in general. My roommate is a teacher and has her "first day of school" on Wednesday. I've been out of school for three years now (mind-blowing), but I still feel a sense of back-to-school, come early fall. 

With three trips to Norman, OK in the past week and a trip to Dallas to celebrate my first college friend, those four wild years seem to be heavy on my brain recently. Something I wouldn't want to go back to, but and crazy thankful for all the memories, lessons and friendships made. Anyone else reminisce this time of year?

-Back at Commonplace for a lunch with my oldest friend while she's in town post- Bar exam and pre- DC living! 
-Read this one in 3 days. If you went through recruitment, this book is a hilarious dramaticized, yet accurate depiction of what goes on in the greek system.
-Lunch board is B A C K! couldn't find figs in the store yet, so opted for these cherry plums from TJ's. Taste like a plum but have the pit and similar size of a cherry.
-KKG till we DIE. Back at our favorite house for Alumni Night!
-Okie Southern Salad recipe got posted last week. Loved how this summer salad turned out.
-Popped up and ready to shop! Check out these two entrepreneur friends of mine! Earrings and orchids, take your pick.
-Detox tea, sleep well spray and my book of the week. Sleeping gooood these days.
-Always thankful when we get the group back together! Especially when we get to celebrate our Marge!
-Cutest two, soon to say I Do!

Bites of My Life

Let's just skip to the weekend shall we, because it trumped last week. I left for Houston, Friday, for my long time "blogger besties" wedding. It's funny to think we truly met on the internet, but it was a testament that you can make friends anywhere. Molly and I found each other on the web during college through our blogs. With noticeable similarities we became virtual friends. With just being a state apart, opportunities like Austin City Limits and OU/Texas weekends led us to meet up in person. A few other times like our BB Dallas weekend and my stay at AirMB kept our friendship going. 

Molly's big day finally arrived and I couldn't have been more excited to be included. A stay and spend with my great friend/Houston host/plus one, Claire, made the weekend even better. (Claire and I were set up freshman year to be roommates and have been friends ever since). We both mutually love homemade matchas, health food, fitness and silk scarves ;) We dined at Emmaline, Juice Land, Tiny Boxwoods and then had the best wedding food I've ever heard/seen/eaten at Molly's reception. Molly and William's wedding was jaw drop worthy and the most beautiful wedding I've ever seen. Not to mention extremely fun. 

Here's to starting the week on a weekend hight and hoping it gives me motivation to get Monday...

-Craving tomatoes, as I should be since they are perfectly in season right now. I've been buying a bunch of vine ripened tomatoes and chopping to put in salads or thinly slicing and topping with everything but the bagel seasoning for a snack while I cook dinner.
-Wheels up to H-Town for #MollyMadeASlamDunc. Also, I love traveling by myself, anyone else?
-Hi from Houston! 
-Walked, juiced, worked out, ate, shopped and more all around town with Claire!
-Best friends make the best plus ones.
